Smoked Salmon Flatbread

I know I’ve said before that I have kind of a weird memory. But like, y’all don’t even know the extent.

An example:

I remember the first time I ever ate a caper. It was the summer after 7th grade and my mom and I were in Florida with my best friend, her mom, and her sister and two of her friends. We all went out to eat before the mothers headed back to the condo and the rest of us went to a club for some sort of teen night – which turned out to be hilariously sketchy.

For dinner, I ordered Chicken Picatta. I was hesitant about the little green pod looking things, but figured, meh, what the heck. I ate one and loved it. It reminded me a little of a green olive (I also love all things olives). In that moment, I fell in love with capers. I’m not even sure how to describe them other than “like a green olive, but not as potent.” Yes, they are salty. Maybe with a hint of citrus?

Anyways, I feel that they are underutilized. I mean, other than my eating them straight of the jar (hey – this is a judgment-free zone) – what else do I really use them with other than my “picattas”?

Smoked salmon. But I never actually make that at home. I do love it when I’m out for Sunday brunch somewhere and there’s a table with smoked salmon and all of the fixings. Chopped egg, red onion and, obviously, capers. Any excuse to load up on capers/olive/pickles in public and you can count me in! (Again – no judging!)

So the other night, after attending my workplace’s annual chili cook-off at lunch, I needed something a bit lighter for dinner. I decided on smoked salmon flatbread and I think I have found a new favorite! This version is super easy because I went with a pre-made version but I am sure you can trim off some WW points making your own dough!

Smoked Salmon Flatbread (1 Flatbread = 13 WW Points)

1 piece whole wheat Naan

Olive oil spray

Garlic salt

2 Tbsp. reduced-fat cream cheese

1 1/2 Tbsp. chopped red onion

2 Tbsp. capers

1 1/2 oz. smoked salmon

Dried dill

Salt and pepper

This is so embarrassingly easy that I didn’t even take step-by-step shots! Spray the flatbread with olive oil or cooking spray and sprinkle with garlic. Bake on a cookie sheet at 350 for 5 minutes.

Spread cream cheese on top, sprinkle onion and capers evenly on top of the cheese. Bake another 5 minutes.

Remove from the oven and layer the salmon on top. Sprinkle with dill, salt and pepper.

Slice, serve and devour. I enjoyed this deliciously light meal with a glass of crisp chardonnay and liked it so much I did it again 3 nights later.

Chicken Picatta

It is March 1st. What is up with that?

I feel like I was just crying about celebrating the big birthday weekend, new hairstyle and all, but now you’re telling me it’s March?

I don’t even want to think about the fact that the weather will be warming up and the fact that bathing suits are hanging up in stores. *Shudder*

I’m not sure about y’all, but I definitely took a swan dive off the proverbial wagon and have some serious work to do before I’m bathing-suit ready. So back to hard work and discipline I go! Honestly, it’s just been pure laziness in my planning. If I don’t know what I’m making for dinner when I leave work, it’s easy to decide on take-out  – and I lack self-discipline when it comes to eating out!

If you’re in the same boat but still have a love for food, then I hope you enjoy some of the guilt-free recipes I have to share with you, such as what I think is my absolute favorite recipe, lightened up! (Side note – I love capers, olives, peperoncinis and can eat them out of the jar at any given time – so I usually hog the capers in this dish!)

Lightened Up Chicken Picatta  (serves 2 / 7 WW pts. per serving)

Ingredients

8 oz. chicken breast (I buy the thin cut ones, about 4 oz. each)

2 Tbsp. white whole-wheat flour

Salt and pepper to taste

2 tsp. olive oil

1/2 tsp. minced garlic

1/2 cup dry white wine (chardonnay is my personal preference)

1/2 – 3/4 cup fat-free chicken broth

1 Tbsp. capers, drained

1 Tbsp. Blue Bonnet light (using a different reduced-calorie margarine may affect points)

1 1/2 Tbsp. fresh lemon juice

2 slices lemon

Begin by heating olive oil in a medium skillet over medium heat.

While oil is heating, sprinkle both sides of chicken breasts with salt and pepper. Coat in flour, shaking off any excess.

Flour

Add chicken to pan and cook for 5 minutes on each side. Set chicken aside on a plate and reduce heat to medium-low.

Saute

Now add white wine and garlic to the pan to de-glaze, scraping up any of the delicious browned pieces. Cook 1-2 minutes. Add broth, lemon juice and capers and stir. Return chicken to pan and cook 2 minutes one each side.

Add chicken to plates. Then add margarine to the sauce and stir until melted. Pour sauce over chicken and serve…

Spicy Sauteed Triggerfish with a Lemon Wine Sauce

Happy Thursday everybody!

Normally, Thursday isn’t all that exciting – but this is the Thursday before a long weekend! While I might not have incredibly exciting plans, it’s still a long weekend. Which means next week is a short week.

Next week is also the final week of my husband’s incredibly demanding and strict study schedule. So on Saturday afternoon – I get him back. So I get to be excited that it’s Thursday!

Can I get an “amen”?

Okay then, moving right along!

So I know I have mentioned to you several times how much I love seafood. Well my parents discovered a great little place to get fresh seafood – a man and his wife drive up to Memphis each week from the Mississippi coast with a big trailer full of lots of good, fresh stuff. Even selections that are hard to find in grocery stores!

Well, my dad stopped by to grab some smoked tuna dip (Y-U-M) and the man was packing up to leave. So he just “donated” a few items to him. Fortunately for me, my parents were leaving town, so I inherited some fresh, delicious fish to play with.

Like Triggerfish. Crickets again? Exactly.

Now, it’s tough to find Triggerfish recipes out there. But I did read that it’s a meaty, rich fish – similar to Grouper, but with a buttery flavor, like Lobster.

So you know what that says to me? Butter. Wine. Capers.

Do we really need more in life? I honestly think I could eat capers out of the jar…oh wait, I already do. And wine…well, really people?

If you can’t find Triggerfish – I think that Grouper would be a great fish substitution for this recipe – perhaps adjusting for cooking time.

Now this is a little higher in WW points for the main dish (about 9 – guess-timating since I couldn’t locate nutritional info.), but I just paired it with a few slices of bread and some brown rice and it made for a light and luxurious weeknight meal.

Triggerfish with a Spicy Lemon-Wine Sauce (serves 2)

2 Triggerfish filets, about 6-7 oz. each (mine had skin on – so I left it and it was fine)

1/8 tsp. salt

1/8 tsp. black pepper

1/4 tsp. Tabasco sauce

4 Tbsp. reduced-calorie margarine

1/4 cup white wine

1 Tbsp. fresh lemon juice

1 tsp. minced garlic

1 Tbsp. capers

Heat 2 Tbsp. margarine in a large skillet over medium heat.

Salt and pepper your fillets. I scored the skin (just a few little superficial slices) to prevent curling.

Add fillets to melted butter and saute about 3-4 minutes, skin side up. Flip and sprinkle “meat” side with a few dashes Tabasco.

Cook another 3-4 minutes, and flip once more. Cook 2-3 more minutes until fish is cooked through and both sides have a light brown color. Set in a medium baking dish and add to oven on low heat to keep warm.

Add remaining margarine (if needed) to skillet and melt. Reduce heat to medium low.

Add white wine, garlic, caper and lemon juice.

Cook for about 2 minutes, until simmering lightly and sauce thickens a little.

Oh and if you have to open a whole bottle of white wine and don’t know what to do with some of the “excess” – I’m sure I can help you think of something…

Now, remove fish from oven. Plate your fish and pour sauce on top of each fillet.

 

Now, dig in! The rice and bread did a great job of soaking up the excess sauce…which was total yumminess…

Thanks Mom and Dad – next time you should get your new buddies to “donate” four fillets and maybe you’ll get a free dinner out of it…
